A healthy lump of mature 12 month aged Zamorano accompanied by two delicate ‘Shilling’ goat cheeses.  Sweet, tender air cured Coppa brings a touch of extra seasoning to the ensemble, balanced by subtle perfumed sweetness of our own quince jelly.  Plump rosemary & thyme mixed olives bring a lovely umami hit and this is all perfectly played out on top of a delicious Fionagh’s seeded cracker.  Get in my tummy!!!!

Shilling by White Lake Cheese

A chapeaux to the classic French crottin. This cheese can be eaten young or old, its diminutive stature creates the perfect ripening conditions, never becoming completely soft. A thin delicate rind develops a colourful mosaic of moulds as it ages, all bring their own flavours to the party. This wraps around a delicious fudgy paste with notes of citrus and only a slight capric hint. WE ABSOLUTELY LOVE THEM!

60g Marsh Pig Coppa (Great Taste Gold Winner)

The secret to the deliciously rich and creamy flavour is in not rushing. Somerset Charcuterie use the eye of the shoulder from slow-growing rare breed pigs and spend time preparing the cure to release the oils and flavours from Tellicherry pepper and the juniper. Matured for 3-6 months depending on it’s size.

Nothing happens quickly in this process but the reward is in the result

220g Silver & Green Rosemary & Garlic Mixed Whole Olives

 

A fragrant mix of whole olives in a hand prepared oil marinade with rosemary & garlic.

These olives have been prepared using beautifully wholesome & traditional Mediterranean methods; all Silver & Green Olives are naturally ripened and then picked, ready to be authentically cured.

Silver & Green olives are fermented using a slower, more traditional process than others (and they are not pasteurised either!).  Because of this, the lactic acid bacteria formed during the pickling and some of the yeasts in the fruit, can hang around and form a little bubble or white clouding in the pack. It’s natural, healthy and won’t affect the enjoyment of your olives!

Fionagh's Seeded Sourdough Crackers

Each batch is handmade using their own sourdough mother which is specifically fed and fermented to create the perfect punch and crunch. The mother is mixed with the finest rye flour, rapeseed oil and a little sea salt to achieve the perfect texture and taste. It’s then rolled and sprinkled with pumpkin, poppy and sunflower seeds before baking.

Baked until golden and crisp, they are the natural choice for your cheeseboards.
