Terroir: there is no greater provenance for a cheese. Comte cheese completely embodies the natural environment in which it is produced: the specific breed of cattle used (Montbeliarde or French Simmental) and the pasture, soil, topography and climate all align perfectly to make this truly amazing cheese. And what a place! High up in the Jura Massif region of eastern France and the cheese, like our very own artisan cheddars, is aged in the solitude and darkness of the mountain caves. Where it crosses its legs, meditates for eighteen months and, after a short pilgrimage across to our shores, is delivered to you for your very own enlightenment.
