Three of the finest British blues, married together by a very special Montbazillac.  Beauvale is just simply dangerous to have around, it just disappears.  Britain’s answer to Gorgonzola is sweet, and creamy.  This is cut through with the piquant fresh acidity from the Beenliegh Blue, this trio is brought into perfect harmony with the raw milk ‘stiltonesque’ Stichelton.  …and then we have the Montbazillac!

Bruno and Claudie Bilancini’s 400 year old vineyard is situated in the region’s premier crus. Since 1997 when they bought the estate they are now regarded as one of the trailblazers.  Obtaining almost perfect scores from the likes of Robert Parker and Jeb Dunnuck these wines regularly display levels of concentration, richness and balance that demonstrate their ability to age over for 30 to 50 years.

The vineyard is planted with a high percentage of Muscadelle (50%), along with Semillon (45%), and Sauvignon (5%). These grapes are picked grape by grape (as they develop the noble rot), not by bunch. The proprietors, Claudia and Bruno Bilancini, actually pass through the vineyard a minimum of four to five times a day.

Ok so we love this cheese. It's sticky, creamy and could be described as 'pudding', its 'Gorgonzola'esq style makes it a spoonable delight.  We call it a 'gateway blue', it'll definitely get you hooked and beware, it might lead on to 'harder' things!

This will charm the blue cheese lover and tempt those on the blue fence into delicious pastures new. The blue version of salted creme caramel... don't fight it, just do it!


Beenleigh Blue

A chameleon of a cheese exhibiting many flavours as the seasons change - similar to a Roquefort: from light and fruity through to sweet and robust.  This sophisticated blue cheese is moist with a crumbly, flinty texture.



The 'un-conformist's' Stilton.  Unpasteurised and therefore not allowed in the Stilton club, this is a riper! The name? Recorded in the twelfth century Lincoln Rolls, an early record of villages rather like the earlier Domesday Book which was carried out by Lincoln Cathedral. Derived for the old English 'Stichl' meaning a style and 'Tun' meaning village or hamlet."  The cheese; creamy, rich and nutty, with a gentle blue tang. Unpasteurised milk, slow acidification and hand-ladling make this cheese a revelation.
