St Cera
Cow's cheese • Soft • British
£6.95
Made by Julie Cheyney from the fresh milk of a single herd of Montbéliarde cows on a family farm in Suffolk (the very same herd that produces the milk for the Baron Bigod). All the St.Jude (including St Cera) Cheeses are handmade in small batches with great care, passion and respectful of this delicious, complex milk. Enjoying the seasonality of the milk which shapes the cheese is a special distinction of raw milk farmhouse cheeses and is to be celebrated.
St.Cera is a small, soft, washed rind cheese with a soft paste, warmer and nuttier than St Jude, getting more pungent with age. Similar to St Marcelan but of course British!
Each cheese is around 95g

Bungay, Suffolk
Tasting notes:
St.Cera is the washed rind sister cheese to St.Jude. At a week old some St.Jude cheeses are selected to be washed in a brine solution, developing a pink/orange blush on the rind and warmer, nutty flavours strengthening with age.
