This exceptional cheddar has a dense, creamy texture and is distinguished by its full-bodied flavour with a succulent and lactic bite. A grown up cheddar for a discerning palate; its subtle complexity deserves time to develop in the mouth, giving of hints of toasted seeds, fruit and drifts of autumn leaves.

Tasting notes:
The Trethowan Brothers have the Midas touch when it comes to cheese, making award-winning, organic, unpasteurised cheese at their dairy in North Somerset. They have been honing their skills for over 25 years; passionate about keeping heritage cheese making alive and adhering to the principles of the Slow Food movement
Pitchfork is made only 5 miles away from Cheddar itself, using traditional methods before being cloth-bound with lard. The name ‘Pitchfork’ originates from the way in which cheddar was historically made, when old farming tools were used to toss the curd whilst mixing in the sale. The Brothers still use similar methods today with contemporary additions to this heritage process. Pitchfork is matured with us for an exceptional 10 -12 months, developing its signature multi award winning flavour. We love it!
