Devon Blue is one of several cheeses made by Ben Harris and his talented team at Ticklemore Cheese Dairy in Totnes, Devon.  Beenleigh Blue, a sheep’s milk cheese inspired by Roquefort was created by Ben’s predecessor Robin Congdon.  However Robin wanted to create a cows milk blue cheese which could be made all year round unlike sheep’s cheeses where production stops prior to lambing.  Milk is gathered from a 10 mile radius from a co-operative of farms.  After being moulded and pierced the cheeses are wrapped in foil so a rind cannot develop and hence Devon Blue was created.
