At its summit rests a delicious Tor from Whitelake Cheese, drawing the eye and tastebuds alike. Underneath, perhaps an even more irresistible prospect, is the pure white blooming rind of the Burgundy born Delice de Cremiere. With a tip of its chapeau to other hard ewes’ milk cheeses like Manchego, but milder than a Pecorino, Berkswell breaks from the cover of the straight lines and ashy rinds with its stunning form and rusty hues. Cropwell Bishop Stilton; salty, sharp and sweet atop fresh flavoured Gorwydd Caerphilly, with its mouthwatering umami undertones, are completed with a perfect slab of Montgomery Cheddar.
