Montgomery’s Extra Mature Cheddar has a rich, savoury, nutty flavour, crumbly texture and the occasional flash of blue towards the rind. At 18 months matured the intensity has stepped up; autumnal aromas of tree fallen fruit, a gentle bite to the gums, with pockets of delicious crunch and a deep buttery hue. It is something special!

This cheese is worthy of its place here at L’affinage due to its rich, savoury ‘umami’ flavour. It is the best representation from the home of Cheddar; Somerset. Jamie Montgomery, whose family have farmed in South Somerset for three generations, uses the milk from his own herd of 200 Ayeshire cross Friesian cows that graze the alchemic Somerset pasture in North Cadbury. This cheese is made with real care and attention, made in small batches and matured for around 18 months; developing complexity and depth.
