Witheridge has the strength of a cheddar but the sweetness and umami notes of an Alpine cheese. Semi hard with a lovely earthy, grassy hit thanks to its unique hay overcoat.
Matured in a special herb rich hay which is grown specifically for this purpose, laden with special fragrant grass seeds. The hay is dried and roasted to ensure it is perfectly food safe.
Rose Grimond grew up on the family 2000 acre estate owned and run by her Mother and Aunt which has been in her family for 100 years. Cheesemaking wasn’t Rose’s first passion, instead she ventured to London to fulfill her dream of becoming an actress, then working with ex offenders and onto Borough Market selling Scottish produce.
When family discussions about the future of the family farm were raised she decided to move back to her family home and find a way to make the farm viable. They received organic accreditation, they seeded lays with a special herbal grass mix, reduced their dairy herd from 500 high yielding to 130 mixed cows (Montbeliard, Swedish Poll and Friesian Holstein) which produce a much finer, quality milk.
It was in 2015 that Rose created ‘Nettlebed Creamery’ with a strong environmental ethos, eco-wood chip boiler and solar panels. Now several award winning cheeses are made at the dairy all of which are named after the local landmarks.
