Tasting notes:
Anne Wigmore and her husband Andy founded Village Maid Cheese in 1986. Anne’s background working as a microbiologist for 10 years at the National Institute for Dairying meant she was ideally placed to put all her theoretical knowledge into practice. In the early 1990’s Wigmore was born which uses a washed curd process whereby some of the whey is replaced with water giving the cheese it’s characteristic texture.
