  • Smelly Ha’peth

    Smelly Ha’peth is the creation of ex Corrie star Sean Wilson (aka ‘Martin’) and is Inspired by the soft creamy form of Gorgonzola Dolce.  Now trading under the name of Saddleworth Cheese sourcing all of their milk from the Ribble Valley in the Trough of Bowland; True Lancashire Milk. Smelly Ha’peth is a gentle blue, not too salty with a soft yielding texture, relaxing more as it matures.

    Lyburn

    Comes in a 5kg round, 9 inches across. It is ripened for about 8- 12 weeks, and has a creamy smooth texture with very small holes, eyes, to be seen evenly distributed throughout. In terms of a make, it is a washed curd cheese, more continental, closer to a Gouda, but not typical. Technically it is a hard cheese because it has been pressed, it is generally described as semi-hard because at 10 weeks it still has some movement in it, great for melting.  Get your toasty game on!

    Rainbow’s Gold

    Rainbow’s Gold is a unique, unpasteurised cheese from Somerset. Made by Phil Rainbow of the Somerset Cheese Company, Rainbows Gold is based on a cheddar recipe but then washed in ‘Golden Chalice’ ale from Glastonbury, which gives it a softer, stickier texture than a typical cheddar. It has a surprisingly strong flavour with grassy, farmyard notes and a crumbly but melt in the mouth texture that lingers pleasantly.

    Taleggio Valsassina

    Taleggio dates back to before the 10th Century. These classic Italian cheeses were made with excess milk that the family didn’t use,  which could then be stored or sold at market.. Aged for at least seven weeks it develops its characteristically beautiful brick/rust coloured rind. The producer of this cheese describes its flavour as ‘sweet and sapid with pleasant notes of undergrowth and cellar’. As with most cheeses, Taleggio gains more obvious complexity with age. To you and me that means it gets stronger! 

    Bagborough Brie

    Roger at White Lake Cheese is a constant innovator with an eye for perfection. Bagborough brie is made with organic Channel Island milk from their own herd on Bagborough Farm near Shepton Mallet.  Its white mushroomy rind gives ways to a beautiful butter hued paste, fresh and zippy, breaking down to reveal a runny delight to its edge.
