  • Durrus

    Created by Jeffa Gill in 1979. Durrus Cheese has a natural rind that is developed slowly by washing it with cultures that are specific to the Durras dairy. These cultures (b.linens) develop the mottled pinkish skin as the cheeses ripen in the curing rooms. The paste is straw coloured with irregular tiny holes and a soft pliable texture. Durrus ranges from mild, mellow and grassy when young to rich, strong and earthy as it ages. Most recently it was awarded a Gold Medal at both the 2021 Irish Food Awards and 2021 British Cheese Awards.

    Montagnolo

    Montagnolo Affine is a blue, triple crème soft cheese made in the Allgau region of Germany. It is surface ripened with a beautifully ‘downy’ natural grey (edible) rind and is punctuated with delicate little pockets of blue. Ageing at a low temperature allows the cheese to mature slowly and develop its aromatic and spicy flavour.  Notes of freshly picked field mushroom from the rind, over a rich salted butter paste.

    Ubriaco Rosso

    A firm, “drunken” cheese made by Latteria di Moro in Veneto, Italy. The cheese is submerged for two months in red wine and must, and then aged for a further six to ten months. The result  is a cheese that has absorbed the flavours of the wine, and is- balanced by smooth, savoury flavours. The aroma of this cheese elicits memories of wine soaked oak barrels whilst its flavour offers hints of fruity sweetness. The concept of this drunken cheese was born through necessity. During the war, cheese makers would hide their cheeses, submerged in the barrels, to prevent them from being stolen.

    Duckett’s Caerphilly

    Duckett’s Aged Caerphilly has a lovely fresh character with a clean lactic tang, followed by  flavours of summer grass, raw mushroom and a savoury/umami finish. The real beauty of this cheese is the contrast between the crumbly interior and the softer area towards the rind. It’s almost like two cheeses in one!

    Caprino Fresco

    Caprino is a goat’s milk cheese from the Piedmont region of Italy; its name actually comes from the word capra, which means goat. This appellation is similar to how the French use the word chevre [goat] to describe many different types of goat cheese. Caprino Fresco has a bitter sweet, creamy, and slightly citrus taste.
