This rich and complex cheese is made using the ‘washed curd’ method which removes excess lactic acid giving more gentle earthy flavours. This method produces cheeses which taste sweeter, definitely the case here. Washbourne’s texture is springy, dappled with small holes and it’s overcoat of a rind is attractive and slightly acidic. The flavour is subtle, nutty and has a herbaceous edge which is pleasant on the palette.
From the same dairy as Ticklemore, this cheese is named after the neighbouring hamlet of Washbourne where sheep were long ago, bathed in the river Wash!
