‘Red Wine Farmer’
A cheese with proper mountain heritage, close to Gruyere but boasting a washed rind poke in the nose. This cheese is rubbed with red wine infrequently over an eight month period which imparts a characteristic washed rind flavour. It divides opinion at L’affinage HQ, some simply find it too strong but we love it, especially grilled on fresh sourdough toast.
At this year’s World Cheese Championships it scored a very respectable and well deserved Gold medal.
