Based on Whitelake’s very popular ‘Rachel’, Reserva is matured for 12 months to further develop its fruity and nutty flavours. Under its washed rind you will find a firm paste with a smooth texture. This cheese is Brine washed, giving Reserva that characteristic sticky rind and great length of flavour; full, complex, & fruity with the slight heat of maturity.

Cheese making began at Bagborough Farm in the 1930’s making traditional cheddar from the family’s herd of cows. As time passed and the farm evolved, in 2004 ‘Whitelake Cheese’ was formed focusing on predominantly goats cheese. The milk used to create their goats’ cheeses come from Roger’s own herd, a mix of Toggenburg, British Alpine and Saanen goats. Their goats are fed a specific diet adapted for cheesemaking. A local Guernsey herd provides the milk for their cow’s milk cheeses and their sheeps’ milk is from another trusted local supplier based near their farm.
