Made using raw milk to a slow traditional recipe, resulting in a cheese that is smooth and creamy in texture. This means that, not only is it an incredible addition to your cheeseboard, it also melts nicely so you can cook with it too. The milk travels a mere 5 metres from the milking parlour to the processing room next door! The cheese is cloth-bound and aged for 3-4 months.
This was a real surprise to us, for a relatively young cheese it has a lovely rounded finish; a cheese that you could easily eat a lot of without realising!
Made by the only farmhouse cheese makers in Wensleydale, Ben and Sam Spence at Home Farm. A hundred years ago almost every dairy farm would have made their own cheese. Old Roan is made using raw milk to a slow traditional recipe, resulting in a cheese that is smooth and creamy – similar to how Wensleydale would have tasted back then.
Round, smooth, rich and buttery, Old Roan is well balanced with refreshing acidity. Matured on the farm for 3-4 months you can expect more mineral tones towards the rind.
