Old Demdike is a washed curd cheese with a deep russet red natural rind. It has a springy texture and a creamy taste, with sharper lemony after tones.

Compared to Tibb (it’s little sister), the texture is not quite as dry and this one is best eaten at between 10-14 weeks. It’s available between the end of April and up until November/ December.
