David from Kingstone Dairy makes some great cheeses, we’ve all enjoyed the bark girdled Rollright and the multi award winning Ashcombe but now we bring you Moreton. David’s take on a rustic, mountain Tomme, ‘Moreton’ is aged slowly in a cool room during which time the cheeses are turned and brushed weekly to form a mixed rind of native moulds and yeasts. The cheese is rich and buttery with a briney, spritzy acidity. The texture is smooth, giving and silky. Aged for between 3-5 months with a natural rind.
