This is the West Country’s answer to Raclette. Ogleshield is a beautifully gentle cheese which has an interesting complexity. Below it’s pink rind you’ll find a supple and pliant cheese with a sweet and milky aroma and savoury notes. Melts to perfection.
Jamie Montgomery is best known for his farmhouse cheddar, however he wanted to find a way of using his Jersey cow milk which until this point had been sold exclusively for drinking. When two Americans visited Montgomery’s they were tasked with developing a cheese with his Jersey milk. The result was ‘Ogleshield’, a tomme style cheese, called ‘Shield’ because of the way it looked! The cheese was then sent to affineur Bill Oglethorpe who then decided to have a go at washing the cheese and as a result ‘Ogleshield’ was born!

Tasting notes:
After being moulded the cheeses are then washed with a brine solution every three days creating a sticky, aromatic rind which softens the cheese and further develops its deep and savoury flavours.
