Comte cheese completely embodies the natural environment in which it is produced: the specific breed of cattle used (Montbeliarde or French Simmental) and the pasture, soil, topography and climate all align perfectly to make this truly amazing cheese. And what a place! High up in the Jura Massif region of eastern France and the cheese, like our very own artisan cheddars, is aged in the solitude and darkness of the mountain caves.
