Bybrook is the most delicious cheese that you’ve never heard of! From the expert hands of Julianna & Karim, who gave us ‘Baronet’ and ‘Lypiatt’, comes yet more dairy alchemy. This deserves a place on any cheese board. Visually alone Bybrook has a ‘holy’ presence but once you taste the sweet flavour we promise you’re going to want more. We would liken Bybrook to the Tomme de Pyrenees in stature but heading towards Gruyere and other mountain cheeses in texture; firm, with the subtle sweetness of a young Emmentaler. Produced in small batches so grab it while you can. As with all artisan cheeses Bybrook is subject to seasonal changes depending on what the cows are eating at the time, there are always holes but they vary in size accordingly.
