Bybrook is the most delicious cheese that you’ve never heard of! From the expert hands of Julianna & Karim, who gave us ‘Baronet’ and ‘Lypiatt’, comes yet more dairy alchemy. This deserves a place on any cheese board. Visually alone Bybrook has a ‘holy’ presence but once you taste the sweet flavour we promise you’re going to want more. We would liken Bybrook to the Tomme de Pyrenees, slightly firmer yet still with that characteristic bouncy texture, along with the subtle sweetness of a young Emmentaler. Produced in relatively small batches so grab it while you can.
